Ben,

I agree with Drew and Ken. As long as the table top is consistently flat and
level, and the table itself is built structurally stable, it won't make any
difference how the rest of it goes together. As Drew pointed out, be aware
the location of the holes you will need to cut later on for the landing gear
brackets so that you don't have unnecessary (table) structure in the way when
you make the cuts.

Because my work area was height challenged, before I began assembling the
fuselage I cut the table height to 20 inches so I could raise the tail when
it came time to. I actually think it was easier to work on the fuselage on
the shorter table. IMO.

You may also want to consider installing levellers in each table leg.
