I don't seem to have a photo (I think I uploaded one a few years ago
though) but you probably want the pedals as far apart as possible. In
addition some of us also added an inch or so extension on the outboard
pedals to fasten the rudder cables to. The idea being to get the cable
attachment as far outboard as possible to minimize the angle that the
cable bends at the cage fairlead point. I think Canadian rules call for
a pulley if more than a 3 degree bend. Also it may be more comfortable
to keep your feet as far apart as possible in flight.
I did not need any shims under the bearing blocks on 119R but I did have
two layers of doublers there since I mounted the bottom of the master
cylinders on floor brackets. That mod requires doing something to keep
the floor from flexing too much. I think the bearing blocks were indeed
close to the center square tube as you have observed.
You can also get creative if you want. At least one builder moved that
square tube to below the floor. Actually I think he replaced it with an
piece of angle material below the floor.

As I recall, the earlier kits did have a shorter delrin bearing block. The
newer kits have blocks that measure approx. 2" H x 1 3/4" W x 1/2" Thick.
Measurement from bottom of the block to hole center should be about 1
1/4"and bottom of block to bottom of hole should be about 15/16", giving
you
about 3/16" clearance between the 5/8 square tube and the rudder pedal
assembly.
If you have one of the older delrin bearing blocks, just make a shim to
sit
under the delrin block to give you clearance; 15/16" from bottom of block
to
bottom of hole in delrin will give you the clearance your looking for.
