Probably the majority are 6-32, with the length dependent on the depth of
the instrument's bezel or mounting tray, and the panel depth and reach
behind the instrument. Many instruments will be countersunk for flat head
screws, but not all. Except for a little weight penalty, there's usually no
harm in having them a little longer than minimally necessary, and sometimes
it's easier to get washers and nuts on the back side if they're a little
long. (I used Click Bond nutplates wherever possible.) Not everything uses
6-32. My ELT remote uses 4-40, for example, but came with its own mounting
hardware.

Of course, if you're going to have a compass or magnetometer anywhere within
a few feet, all screws should be non-ferrous brass or at least non-magnetic
stainless steel. I used several stainless screws to build the radio stack
frame behind the panel, for example. For things that are visible, the black
brass screws look best and won't give off sunshine glare. An assortment of
1/2" and 5/8" 6-32 black brass screws will probably work for many things
mounted on the face of the panel. (See http://tinyurl.com/2e73ufn) Often you
can get a detailed dimensional drawing of the instrument ahead of time from
the mfgr.'s web site, which will show whether it needs flat head or round.
