Richard, to make you more relaxed regarding fuel the 5psi is usually a maximum rating. In a float carb any pressure sufficient to keep the bowl full is enough. The 5 psi max is based on the ability of the floats to put enough pressure on the float needle to seal in the needle seat against incoming fuel pressure. As the fuel level in the bowl drops the floats drop pulling the needle down and flow begins. If the flow is not sufficient for the engine demand at the time fuel level continues to drop until starvation occurs. Only when the level has dropped considerably will the engine run lean.

The FAA requires 150% of max engine fuel requirement at the carb in worst case flight attitude. That at least means that the system can provide enough fuel to the carb.
